There really is no better meatloaf in the world!! Truthfully, there is no better Mimi in the world either!! The meatloaf is almost as spectacular as our Mimi. I know I am biased, but one taste and you will be too!!

everyone most everyone knows about Mimi’s meatloaf. You will find it served at family gatherings, pot luck at church, even the school cafeteria. It’s delivered with love when you’ve been in the hospital, had a baby or lost a loved one.
It was requested and the perfect choice for staff lunch at school.
Mimi’s Surprise Meatloaf
1 1/2 lbs . ground beef
1 1/2 c. Ritz cracker crumbs
1 c. diced Velveeta
1/2 c. chopped onion
2 Tbsp. chopped green pepper
1/2 tsp. salt
1/2 tsp. garlic salt
2 beaten eggs
1 8 oz. can of tomato sauce
Combine all ingredients and make loaves or put in a 9×13 pan. Bake at 350 degrees for 30 minutes.
Make a topping of 2 Tbsp. ketchup and 1/4 cup brown sugar. Pour on meat loaf after 30 minutes and return to the oven to bake for an additional 30 minutes. Yummy meatloaf 😁
Confession … I am not a measuring type of girl. I am more of eyeball and dump kind of girl. So when I make this recipe, I have more onion and green pepper and LOTS more cheese.
I love the melty cheese that oozes out of every bite. I also make sure that I have plenty of sauce that goes on top … LOTS OF SAUCE!! You will find your own preferences and adjust to your likings.

I love this. This is similiar to my meatloaf, but I use saltines. I will have to try Ritz.
